Applesauce Corncakes
3 eggs
1 cup applesauce
3 T. brown sugar
1/2 tsp cinnamon
8 1/2 oz Jiffy corn muffin mix
Mix all ingredients well, bake on a hot griddle. Turn carefully-these can be fragile. Serve with butter, no syrup needed.
