Ginger Ale

A true ale, not for children!

Prepare 6 12oz fliptop bottles such as Grohlsch bottles with rubber seals: Boil bottles with seals in a large pan or canning vat to sterilize. Remove with tongs, drain carefully so as not to touch the bottle seal or lip. When drained, stand bottles upright on counter unsealed.

Prepare ginger ale mixture:
In 75 oz water, boil one large ginger root, peeled and chopped and placed in a cheesecloth bag. Simmer for 10 minutes, remove ginger. Add 1 cup honey, 1/4 cup key lime juice, 1 cup brown sugar and 1/4 tsp baker's yeast. Stir with sterilized instrument to dissolve sugar and yeast well. Mixture will be slightly cloudy. Carefully pour mixture into bottles, leaving 1 1/2" space at top. You can use a sterilized glass measuring cup with pouring lip to transfer the liquid to the bottles, be careful not to immerse your fingers in the liquid (this may contaminate the ale). Seal bottles and leave on the counter at room temperature for 24 hours. Place in refrigerator for at least 3 weeks before consuming. Uncap with care-these tend to bubble a lot. Pour carefully into tall glasses, leaving sediment at bottom of bottle.
