Granola Crunchies

2 cups quick cooking oats
1/8 tsp salt
1/4 tsp cinnamon (optional)
2T brown sugar
1 cup any combination of raisins, nuts, coconut, dates, dried fruit
Mix well in a large bowl.

Blend: 1/4 cup oil
1/4 cup honey
Drizzle over oats mixture, mix thoroughly.

Spread mixture in a thin layer over a large greased cooky sheet or shallow baking pan. Bake at 250 degrees for 45 minutes, stirring occasionally until toasty brown. Cool, also stirring occasionally. Store tightly covered.

Great not only as a trail mix or snacking cereal, but as a presweetened cereal with milk. Use as a substitute for nuts in cooky recipes, or as a cruchy topping over pie filling for an instant fruit crisp.
