Beef Stroganoff

I always saved this recipe for impressing guests and for family dinners when something special was appropriate:

Prepare one recipe Homemade Noodles.

Tenderize a chuck roast or use 1-2 lb tender steak meat. Cut into 1" wide strips about 2" long. Brown in a little hot oil with minced garlic and thyme if desired. Remove meat and, in the drippings, saute one medium sliced onion and 6 oz sliced fresh mushrooms. Replace meat in pan and add one can undiluted beef broth. Add salt as necessary, although commercial beef broth is probably salty enough. Simmer 15-30 minutes until meat is tender. Add one cup sour cream. Thicken with a little corn starch or flour if needed (mix flour or starch with water before adding to sauce). Serve over noodles.
