Emergency Recipe Substitutes for EggsSince eggs can be divided into whites and yolks, each with approximately an equal amount of volume, you can substitute 2 egg whites for one whole egg in most recipes. 1 large or extra large egg equals 2 small eggs. Egg whites and yolks have approximately the same amount of protein, but the yolks contain the oils. You can substitute white for yolks but not always yolks for whites. It will depend on the recipe. If you need to whip the whites into a fluff, as for meringues, yolks will not work. In fact, if you accidentally get some yolk into the whites when separating the eggs, the whites will not beat as well.Meringue powder is available in the cake decorating supply section of grocery and department stores, and whole egg powder may be available in emergency supply stores along with MRE's and other emergency food supplies. Unfortunately, there is little in the kitchen that can commonly be used to substitute for eggs.
