Emergency Flour Substitutes

1 cup all purpose flour=7/8 cup cake flour
1 cup flour in bread=1/2 cup wheat, oat or corn bran mixed with enough all-purpose flour to make 1 cup.
Rice flour, corn flour, oat flour, etc are all substitutes for wheat flour in recipes. Wheat flour contains gluten in much larger amounts than alternate flours. Read container for specific instructions from flour manufacturers. There can be a wide difference in the way flours handle and bake depending on the way they are ground and packaged.
