Emergency Recipe Substitutes for Leavenings
You can substitute one teaspoon cream of tartar plus one-half teaspoon baking soda for one teaspoon of baking powder. Recipes such as cornbread and banana bread are quick breads leavened with baking powder or soda. Many recipes are dependent upon the type of leavening used. For instance, traditional sliced bread is not possible without yeast. I have, however, substituted yeast for baking powder and the other way around with some very interesting and tasty results. Keep in mind that a recipe based on yeast rising usually calls for kneading or beating for a long time to develop gluten in the dough. This will hold in the bubbles yeast produces as it works, causing the dough to rise. Beating a quick bread, cake or cookie dough for a long time will make it tough if you are using baking powder or soda as a leavening. Experiment with your particular recipe and you may just come up with something new! Many bread recipes can be made without the yeast and baked on an oven stone or griddle as flat tortillas.
