Emergency Substitutes for Sugar and Other Sweeteners

Granulated sugars such as white sugar, brown sugar, date sugar and maple sugar, can be substituted for one another in the same amounts. Substituting another sugar for granulated white sugar in a recipe will lend a rich, distinct flavor to the finished product.

The following products are interchangeable in the same amounts, and will affect the flavor of your baking or cooking:
Honey
Molasses
Corn Syrup (dark or light)
Cane Syrup
Maple Syrup (use 3/4 the amount called for since it is thinner)

If using syrup, honey or molasses instead of granulated sugar, use 3/4 the amount called for and reduce the liquid in the recipe by 1/4 cup for each cup of sugar in the recipe. If using sugar for a syrup, make a syrup as follows:

Sugar Syrup:
1 cup water
2 cups granulated sugar or brown sugar
Simmer until a syrup is formed. Use as syrup, honey or molasses in recipes.
