Emergency Recipe Substitutes for ThickenersThe following amounts are interchangeable for thickening fruit pies, stews, etc, although the textures are slightly different:2 T. flour 1 T. cornstarch 1 T. potato starch 1 T. rice starch 2 1/2 tsp arrowroot For making gravy, if the recipe begins with a roux made with flour and oil you really can't substitute for the flour.
