Emergency Recipe Substitutes for Thickeners

The following amounts are interchangeable for thickening fruit pies, stews, etc, although the textures are slightly different:
2 T. flour
1 T. cornstarch
1 T. potato starch
1 T. rice starch
2 1/2 tsp arrowroot

For making gravy, if the recipe begins with a roux made with flour and oil you really can't substitute for the flour. If the recipe calls for cornstarch to thicken a boiling liquid such as stew you can substitute one thickener for another.
